Spinach and Tomato Pizza

Ingredients
  1. 1 tablespoon plus 1 teaspoon olive oil, divided
  2. 1 (10-ounce) bag fresh spinach, stemmed
  3. 2 teaspoons bottled minced garlic
  4. 1 (24-ounce) package pizza crusts
  5. 1 (8-ounce) package shredded mozzarella cheese, divided
  6. ¾ cup ricotta cheese, divided
  7. 2 plum tomatoes, thinly sliced
  8. ¼ red onion, thinly sliced
  9. ¼ cup shredded Parmesan cheese, divided
  10. ½ teaspoon salt, divided
  11. ½ teaspoon ground black pepper, divided
Instructions
  1. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add spinach and garlic; cook, stirring occasionally, for 4 to 5 minutes or until spinach wilts.
  2. Preheat oven to 450°.
  3. Brush edges of pizza crusts with remaining 1 teaspoon olive oil. Bake crusts directly on oven rack for 5 minutes. Remove from oven, and sprinkle each with ¼ cup mozzarella. Top each with half of spinach mixture. Dollop half of ricotta over each pizza, and sprinkle with remaining mozzarella. Top with tomato and onion. Sprinkle each with Parmesan, salt, and pepper.
  4. Bake for 10 to 12 minutes or until cheese melts and crusts are golden brown.
