This Simple Homemade Ravioli is a delicious meal full of flavor from fresh spinach, ricotta cheese, Parmesan, and garlic. You’ll know when the easy-to-prepare ravioli are done—they’ll float to the top of the simmering water.
Simple Homemade Ravioli
Makes 6 to 8 servings
Ingredients
- 1 (9-ounce) bag fresh spinach
- 2 tablespoons water
- 1 (15-ounce) container ricotta cheese
- 1 cup freshly grated Parmesan cheese
- 1 large egg
- 2 cloves garlic
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 68 wonton wrappers (about 1½ packages)
- 1 (16-ounce) jar marinara sauce
- Shaved Parmesan cheese
- Garnish: fresh basil
Instructions
- In a large microwave-safe bowl, place spinach and 2 tablespoons water. Cover with plastic wrap, and microwave on HIGH, in 30-second intervals, until spinach is wilted (about 1½ minutes total). Drain spinach well, and press between paper towels to remove excess moisture.
- In the work bowl of a food processor, combine ricotta, Parmesan, egg, garlic, lemon zest, salt, and pepper. Pulse until smooth. Add spinach; pulse until smooth.
