In a large microwave-safe bowl, place spinach and 2 tablespoons water. Cover with plastic wrap, and microwave on HIGH, in 30-second intervals, until spinach is wilted (about 1½ minutes total). Drain spinach well, and press between paper towels to remove excess moisture.
In the work bowl of a food processor, combine ricotta, Parmesan, egg, garlic, lemon zest, salt, and pepper. Pulse until smooth. Add spinach; pulse until smooth.
