Simple Homemade Ravioli
 
Makes 6 to 8 servings
Ingredients
  • 1 (9-ounce) bag fresh spinach
  • 2 tablespoons water
  • 1 (15-ounce) container ricotta cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 68 wonton wrappers (about 1½ packages)
  • 1 (16-ounce) jar marinara sauce
  • Shaved Parmesan cheese
  • Garnish: fresh basil
Instructions
  1. In a large microwave-safe bowl, place spinach and 2 tablespoons water. Cover with plastic wrap, and microwave on HIGH, in 30-second intervals, until spinach is wilted (about 1½ minutes total). Drain spinach well, and press between paper towels to remove excess moisture.
  2. In the work bowl of a food processor, combine ricotta, Parmesan, egg, garlic, lemon zest, salt, and pepper. Pulse until smooth. Add spinach; pulse until smooth.
