Glazed Bacon-Wrapped Carrots

A sweet and spicy glaze and crispy bacon wrapped around roasted carrots makes eating your vegetables much more fun. This technique also works great with parsnips, asparagus, and green bean bundles.

Glazed Bacon-Wrapped Carrots
Serves: 4 to 6
 
Ingredients
  • 10 slices thick-cut bacon
  • 10 medium carrots with tops, peeled and trimmed
  • 1⁄4 cup honey
  • 1 1⁄2 teaspoons hot sauce
  • 1⁄2 teaspoon smoked paprika
  • 1⁄8 teaspoon crushed red pepper
  • Garnish: chopped fresh parsley
Instructions
  1. Preheat oven to 400°.
  2. Wrap 1 slice bacon around each carrot. Place on a large baking sheet.
  3. Bake until bacon begins to crisp, 25 to 30 minutes. In a small bowl, whisk together honey, hot sauce, paprika, and red pepper; brush onto bacon. Bake until bacon is golden brown and crisp, 15 to 20 minutes more. Brush with remaining honey mixture. Garnish with parsley, if desired.
