Wrap 1 slice bacon around each carrot. Place on a large baking sheet.
Bake until bacon begins to crisp, 25 to 30 minutes. In a small bowl, whisk together honey, hot sauce, paprika, and red pepper; brush onto bacon. Bake until bacon is golden brown and crisp, 15 to 20 minutes more. Brush with remaining honey mixture. Garnish with parsley, if desired.
