This colorful and bright salad is the perfect side or starter for a festive meal.
Arugula, Avocado, and Citrus Fruit Salad
Serves: 6 to 8
Ingredients
- Dressing:
- 1⁄3 cup fresh grapefruit juice
- 1⁄4 cup confectioners’ sugar
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 1⁄2 teaspoons kosher salt
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon ground black pepper
- Salad:
- 4 cups fresh baby arugula
- 2 large Ruby Red grapefruit, sectioned
- 2 navel oranges, sectioned
- 2 avocados, halved, pitted, and sliced
- 1⁄2 cup pomegranate arils
- 3 tablespoons chopped salted roasted pistachios
Instructions
- For dressing: In a medium bowl, whisk together grapefruit juice, confectioners’ sugar, lemon juice, oil, salt, mustard, and pepper until smooth.
- For salad: Arrange arugula, grapefruit, orange, avocado, pomegranate arils, and pistachios on a serving platter. Serve with dressing.
