Arugula, Avocado, and Citrus Fruit Salad
Serves: 6 to 8
 
Ingredients
  • Dressing:
  • 1⁄3 cup fresh grapefruit juice
  • 1⁄4 cup confectioners’ sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 1⁄2 teaspoons kosher salt
  • 1 teaspoon Dijon mustard
  • 1⁄2 teaspoon ground black pepper
  • Salad:
  • 4 cups fresh baby arugula
  • 2 large Ruby Red grapefruit, sectioned
  • 2 navel oranges, sectioned
  • 2 avocados, halved, pitted, and sliced
  • 1⁄2 cup pomegranate arils
  • 3 tablespoons chopped salted roasted pistachios
Instructions
  1. For dressing: In a medium bowl, whisk together grapefruit juice, confectioners’ sugar, lemon juice, oil, salt, mustard, and pepper until smooth.
  2. For salad: Arrange arugula, grapefruit, orange, avocado, pomegranate arils, and pistachios on a serving platter. Serve with dressing.
