Ingredients
  1. 1 (14-ounce) can whole-berry cranberry sauce
  2. ½ cup ketchup
  3. 2 tablespoons firmly packed brown sugar
  4. 1 tablespoon whole-grain mustard
  5. 1 (7-ounce) package cornbread mix
  6. 1 tablespoon butter
  7. ½ cup finely chopped onion
  8. ½ cup finely chopped celery
  9. 2 pounds ground turkey
  10. 2 teaspoons poultry seasoning
  11. ½ teaspoon salt
  12. ½ teaspoon rubbed sage
  13. 1 large egg, lightly beaten
  14. 9 potato buns, halved and toasted
  15. Fresh arugula
Instructions
  1. In a small saucepan, cook cranberry sauce and next 3 ingredients over medium-low heat, stirring occasionally, for 15 minutes. Remove from heat, and let cool to room temperature. Cover and refrigerate.
  2. Prepare cornbread mix according to package directions for an 8-inch pan. Bake and let cool completely; crumble into a large bowl.
  3. In a small skillet, melt butter over medium heat. Add onion and celery; cook, stirring occasionally, for 4 to 5 minutes or until tender. Let cool completely.
  4. Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
  5. To crumbled cornbread, add ground turkey, next 4 ingredients, and cooked vegetables, and stir together until well combined. Divide mixture into 9 portions; shape each portion into a 5-inch patty.
  6. Grill patties, covered with grill lid, for 4 to 5 minutes per side or until a thermometer inserted in thickest portion registers 165°.
  7. Spread cranberry mixture onto bottom of buns, and top each with a patty, more cranberry mixture, arugula, and bun top. Serve immediately.
