- 1 (7-ounce) package cornbread mix
- 1 tablespoon butter
- ½ cup finely chopped onion
- ½ cup finely chopped celery
- 2 pounds ground turkey
- 2 teaspoons poultry seasoning
- ½ teaspoon salt
- ½ teaspoon rubbed sage
- 1 large egg, lightly beaten
- 9 potato buns, halved and toasted
- Fresh arugula
Instructions
- In a small saucepan, cook cranberry sauce and next 3 ingredients over medium-low heat, stirring occasionally, for 15 minutes. Remove from heat, and let cool to room temperature. Cover and refrigerate.
- Prepare cornbread mix according to package directions for an 8-inch pan. Bake and let cool completely; crumble into a large bowl.
- In a small skillet, melt butter over medium heat. Add onion and celery; cook, stirring occasionally, for 4 to 5 minutes or until tender. Let cool completely.
- Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
- To crumbled cornbread, add ground turkey, next 4 ingredients, and cooked vegetables, and stir together until well combined. Divide mixture into 9 portions; shape each portion into a 5-inch patty.
- Grill patties, covered with grill lid, for 4 to 5 minutes per side or until a thermometer inserted in thickest portion registers 165°.
- Spread cranberry mixture onto bottom of buns, and top each with a patty, more cranberry mixture, arugula, and bun top. Serve immediately.
