Stewed Okra and Tomatoes

Makes 4 to 6 servings
Ingredients
- 1 tablespoon butter
- ⅔ cup chopped onion
- 2 cloves garlic, minced
- 1 pound fresh okra
- 2 (10-ounce) cans diced tomatoes with mild green chiles
- ¼ cup chicken broth
- ½ teaspoon salt
Instructions
- In a large saucepan, melt butter over medium heat. Add onion and garlic; cook for 4 minutes or until onion softens. Stir in okra, all remaining ingredients, and bring to a boil. Reduce heat, and simmer, covered, for 20 to 25 minutes or until okra is tender.
