Slow-Cooker Hoppin’ John

Every Southerner knows it’s tradition on New Year’s Day to eat black-eyed peas and greens for luck and prosperity, but no one wants to babysit boiling pots on the stove after all that celebrating the night before. Throw all the ingredients for this hoppin’ John into the slow cooker, and relax while the meal cooks itself.

Ingredients
  1. 1 pound dried black-eyed peas, soaked overnight, drained, and rinsed
  2. 3 cups chopped turnip greens
  3. 1 (10-ounce) can diced tomatoes and green chiles
  4. 1 cup chopped onion
  5. ½ cup chopped green bell pepper
  6. ½ cup chopped celery
  7. 3 cloves garlic, minced
  8. 2 (32-ounce) cartons vegetable stock
  9. 1 smoked turkey leg
  10. 2 cups instant rice
  11. 2 teaspoons salt
  12. 2 teaspoons hot sauce
Instructions
  1. In a 4- to 6-quart slow cooker, combine black-eyed peas, turnip greens, diced tomatoes and green chiles, onion, bell pepper, celery, and garlic. Stir in vegetable stock. Submerge turkey leg in mixture. Cover and cook on high for 5 to 6 hours or until peas are tender.
  2. Add rice, cover, and cook for 20 to 30 minutes or until rice is tender. Stir in salt and hot sauce before serving.
