Ingredients
  1. 1 tablespoon olive oil
  2. 2 pounds bone-in skin-on chicken thighs
  3. ½ teaspoon salt
  4. ½ teaspoon ground black pepper
  5. 2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
  6. 1 (4.8-ounce) jar pitted kalamata olives, drained
  7. ½ cup thinly sliced red onion
  8. 2 teaspoons minced garlic
  9. 1½ teaspoons dried oregano
  10. ¼ cup crumbled feta cheese
  11. Garnish: fresh oregano
Instructions
  1. Preheat oven to 350°.
  2. In a large ovenproof skillet, heat oil over medium heat. Sprinkle chicken with salt and pepper, and place in skillet skin side down; cook for 5 minutes per side or until browned. Remove thighs from pan, and pour off drippings. Stir tomatoes and next 4 ingredients into skillet. Return chicken to skillet, skin side up.
  3. Bake for 45 minutes or until thighs are done. Sprinkle feta over chicken, and garnish with oregano, if desired.
