Skillet Greek Chicken

Makes 4 servings
Ingredients
- 1 tablespoon olive oil
- 2 pounds bone-in skin-on chicken thighs
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
- 1 (4.8-ounce) jar pitted kalamata olives, drained
- ½ cup thinly sliced red onion
- 2 teaspoons minced garlic
- 1½ teaspoons dried oregano
- ¼ cup crumbled feta cheese
- Garnish: fresh oregano
Instructions
- Preheat oven to 350°.
- In a large ovenproof skillet, heat oil over medium heat. Sprinkle chicken with salt and pepper, and place in skillet skin side down; cook for 5 minutes per side or until browned. Remove thighs from pan, and pour off drippings. Stir tomatoes and next 4 ingredients into skillet. Return chicken to skillet, skin side up.
- Bake for 45 minutes or until thighs are done. Sprinkle feta over chicken, and garnish with oregano, if desired.
