Roasted Oysters

Ingredients
- 24 fresh oysters on the half shell
- ½ teaspoon kosher salt
- ½ teaspoon ground paprika
- ¼ teaspoon ground red pepper
- ¼ cup unsalted butter
- 1 tablespoon red wine vinegar
- 3 cloves garlic, thinly sliced
- ½ cup panko (Japanese bread crumbs)
- Garnish: chopped fresh thyme, lemon wedges
Instructions
- Preheat oven to 400°. Line a large rimmed baking sheet with aluminum foil.
- Place oysters in shell on prepared pan, and sprinkle with salt and next 2 ingredients.
- In a small saucepan, cook butter, vinegar, and garlic over medium heat until melted. Spoon over oysters, and top with bread crumbs.
- Bake for 15 minutes or until oysters just pull away from sides of shell. Garnish with thyme and lemon, if desired.
