Mashed Cauliflower with Spicy Butter
Serves: 4 to 6

Ingredients
  • 1 large head cauliflower, stem and leaves removed, cut into florets
  • 1 cup shredded Parmesan cheese
  • ½ cup heavy whipping cream
  • 8 tablespoons unsalted butter, divided
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 tablespoon hot sauce*
  • 1 teaspoon Cajun seasoning*
  • 1⁄2 teaspoon paprika
  • Garnish: shredded Parmesan cheese, chopped chives
Instructions
  1. In a large saucepan, bring cauliflower and water to cover by 1 inch to a boil over medium-high heat. Cover and cook until fork-tender, 13 to 15 minutes. Drain cauliflower, and return to pan. Using a potato masher, mash to desired consistency. Stir in cheese, cream, 2 tablespoons butter, salt, and garlic powder until combined. Transfer cauliflower mixture to a serving bowl.
  2. In a small saucepan, melt remaining 6 tablespoons butter over low heat. Whisk in hot sauce, Cajun seasoning, and paprika until fully combined. Drizzle desired amount of butter mixture onto mashed cauliflower. Serve with any remaining butter mixture. Garnish with cheese and chives, if desired. Serve immediately.

*We used TABASCO® and Slap Ya Mama Original Blend Cajun Seasoning.
Kitchen Tip: Mashed cauliflower keeps well overnight in the refrigerator and heats up great in the microwave.
