Kale Salad with Orange Vinaigrette

Serves 6
Ingredients
- 1 head fresh kale, stems removed and leaves chopped
- 6 oranges, peeled and sectioned
- 1½ cups dried cranberries
- 1 cup orange juice
- ¼ cup Champagne vinegar
- 1 shallot, chopped
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ cup extra-light olive oil
- ½ cup chopped toasted walnuts
- 1 (4-ounce) package crumbled goat cheese
Instructions
- In a large bowl, combine kale, oranges, and cranberries.
- To the container of a blender, add orange juice and next 6 ingredients; process until blended. With blender running, add oil in a slow, steady stream until combined. Drizzle orange vinaigrette over kale mixture, tossing to combine. Let stand for 15 minutes, stirring occasionally. Top with walnuts and goat cheese before serving.
