Fresh Tomato Risotto

Makes about 6 servings
Ingredients
- 6 cups chicken stock
- 2 tablespoons butter
- ½ cup minced onion
- 1½ cups Arborio rice
- ⅓ cup dry white wine or vermouth
- 4 plum tomatoes, seeded and chopped
- 1 (5-ounce) package shredded Parmesan cheese
- ½ teaspoon salt
Instructions
- In a medium saucepan, bring stock to a boil over medium-high heat; reduce heat to low.
- In a large saucepan, melt butter over medium heat. Add onion, and cook, stirring frequently, for 2 minutes. Add rice, and cook, stirring frequently, for 2 minutes. Add wine or vermouth, and cook, stirring constantly, until liquid is absorbed, about 1 minute.
- Reduce heat to medium-low, and add hot stock ¾ cup at a time, stirring constantly and letting liquid get absorbed after each addition. Stir in tomatoes, cheese, and salt. Serve immediately.
