Ingredients
  1. 6 cups chicken stock
  2. 2 tablespoons butter
  3. ½ cup minced onion
  4. 1½ cups Arborio rice
  5. ⅓ cup dry white wine or vermouth
  6. 4 plum tomatoes, seeded and chopped
  7. 1 (5-ounce) package shredded Parmesan cheese
  8. ½ teaspoon salt
Instructions
  1. In a medium saucepan, bring stock to a boil over medium-high heat; reduce heat to low.
  2. In a large saucepan, melt butter over medium heat. Add onion, and cook, stirring frequently, for 2 minutes. Add rice, and cook, stirring frequently, for 2 minutes. Add wine or vermouth, and cook, stirring constantly, until liquid is absorbed, about 1 minute.
  3. Reduce heat to medium-low, and add hot stock ¾ cup at a time, stirring constantly and letting liquid get absorbed after each addition. Stir in tomatoes, cheese, and salt. Serve immediately.
