Cajun Roasted Potatoes
- 2 pounds baby Yukon gold potatoes, quartered
- 3 large shallots, quartered
- 1⁄4 cup olive oil
- 2 tablespoons Cajun seasoning
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh rosemary
- Garnish: fresh rosemary sprig
- Preheat oven to 425°.
- In a large bowl, toss together potatoes, shallots, oil, Cajun seasoning, garlic, and chopped rosemary. Place on a rimmed baking sheet.
- Bake until golden brown, 30 to 35 minutes. Garnish with rosemary sprig, if desired.
