Caramelized Pineapple and Berry Salad

Ingredients
  • 2 cups cubed fresh pineapple
  • 1⁄2 cup firmly packed brown sugar
  • 1 cup halved trimmed fresh strawberries
  • 1 cup fresh blueberries
  • 2 teaspoons chopped fresh mint
Instructions
  1. Heat a 10-inch cast-iron skillet over medium-high heat. Add pineapple and brown sugar; cook until pineapple starts to caramelize, about 10 minutes. Transfer to a serving bowl. Let cool for 10 minutes. Add all berries and mint, gently tossing until combined.
