Chopped Salad with Champagne Vinaigrette

Makes 8 servings
Ingredients
- 2 heads romaine lettuce, finely shredded
- 2 ripe tomatoes, seeded and chopped
- 1 yellow bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 cup finely chopped seedless cucumber
- 1/2 cup finely chopped black olives
- 1/4 cup finely chopped red onion
- 1/2 cup olive oil
- 1/3 cup Champagne vinegar
- 1 teaspoon whole-grain mustard
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large serving bowl, toss together lettuce and next 6 ingredients.
- In a small bowl, whisk together oil and all remaining ingredients. Drizzle over salad just before serving, tossing gently to coat.
