Chocolate-Orange Parfaits

These Chocolate-Orange Parfaits are beautifully layered with mandarin oranges, cream cheese, chocolate wafers, and topped with yummy chocolate curls.

Ingredients
  1. 3 (15-ounce) cans mandarin oranges in water, drained
  2. 3 tablespoons granulated sugar
  3. 1½ teaspoons cornstarch
  4. 1 (8-ounce) package cream cheese, softened
  5. 2 tablespoons honey
  6. 2 cups heavy whipping cream
  7. ½ cup confectioners’ sugar
  8. 1 (9-ounce) package chocolate wafer cookies,* crushed
  9. Garnish: chocolate curls
Instructions
  1. In a small bowl, reserve 8 orange segments. In a medium saucepan, bring remaining orange segments, granulated sugar, and cornstarch to a boil over medium-high heat; cook for 2 minutes, crushing fruit lightly with a wooden spoon. Reduce heat, and simmer, stirring occasionally, for 10 minutes. Remove from heat, and let cool to room temperature. Cover and refrigerate for 4 to 6 hours or until mixture is cold.
  2. In a medium bowl, beat cream cheese and honey with a mixer at high speed until creamy. In another medium bowl, beat cream and confectioners’ sugar with a mixer at high speed until soft peaks form. Add whipped cream to cream cheese mixture, beating at medium speed until combined.
  3. In individual serving dishes, layer crushed cookies, cream cheese mixture, and cooked orange mixture as desired. Cover and refrigerate for 2 hours before serving. Garnish with reserved orange segments and chocolate curls, if desired.
