Makes 8 servings
Ingredients
- 3 (15-ounce) cans mandarin oranges in water, drained
- 3 tablespoons granulated sugar
- 1½ teaspoons cornstarch
- 1 (8-ounce) package cream cheese, softened
- 2 tablespoons honey
- 2 cups heavy whipping cream
- ½ cup confectioners’ sugar
- 1 (9-ounce) package chocolate wafer cookies,* crushed
- Garnish: chocolate curls
Instructions
- In a small bowl, reserve 8 orange segments. In a medium saucepan, bring remaining orange segments, granulated sugar, and cornstarch to a boil over medium-high heat; cook for 2 minutes, crushing fruit lightly with a wooden spoon. Reduce heat, and simmer, stirring occasionally, for 10 minutes. Remove from heat, and let cool to room temperature. Cover and refrigerate for 4 to 6 hours or until mixture is cold.
- In a medium bowl, beat cream cheese and honey with a mixer at high speed until creamy. In another medium bowl, beat cream and confectioners’ sugar with a mixer at high speed until soft peaks form. Add whipped cream to cream cheese mixture, beating at medium speed until combined.
- In individual serving dishes, layer crushed cookies, cream cheese mixture, and cooked orange mixture as desired. Cover and refrigerate for 2 hours before serving. Garnish with reserved orange segments and chocolate curls, if desired.
