This indulgent, all-in-one meal makes the perfect weeknight dinner.
Broccoli, Ham & Cheddar Cobbler
Serves: 6 to 8
Ingredients
- 1 tablespoon olive oil
- 4 cups diced ham
- 1⁄4 cup unsalted butter
- 1⁄4 cup all-purpose flour
- 2 cups whole milk
- 1 cup heavy whipping cream
- 2 1⁄2 teaspoons kosher salt, divided
- 4 cups chopped fresh broccoli
- 3 cups shredded sharp Cheddar cheese, divided
- 2 cups self-rising flour
- 1 teaspoon sugar
- 1⁄2 teaspoon baking soda
- 6 tablespoons cold unsalted butter, grated
- 1 1⁄3 cups whole buttermilk
- 3 tablespoons minced fresh chives
- Garnish: minced fresh chives
Instructions
- Preheat oven to 425°.
- In a 12-inch skillet, heat oil over medium heat. Add ham, and cook, stirring occasionally, until lightly browned, 7 to 10 minutes. Remove from skillet.
- In same skillet, melt butter over medium heat. Whisk in all-purpose flour. Cook, whisking constantly,
- until aromatic and lightly toasted, about 1 minute. Gradually add milk, whisking constantly until fully combined and smooth. Whisk in cream and 2 teaspoons salt. Cook, stirring frequently, until thickened, 3 to 5 minutes. Remove from heat, and stir in ham, broccoli, and 2 cups Cheddar until just combined. Pour into a 13x9-inch baking dish.
- In a medium bowl, whisk together self-rising flour, sugar, baking soda, and remaining 1⁄2 teaspoon salt. Whisk in grated butter and remaining 1 cup Cheddar until well coated with flour. Stir in buttermilk and chives until just combined. Using a 2-tablespoon spring-loaded scoop, scoop batter, and place on top of ham mixture. Gently spread without touching edges of dish.
- Bake until golden brown and bubbly, 20 to 25 minutes. Garnish with chives, if desired.
