Black beans, white beans, or light kidney beans can be used instead of pinto beans if you like.
Pinto Beans with Bacon

Makes about 8 servings
Ingredients
- 2 cups dried pinto beans, sorted and rinsed
- 4 slices bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3/4 teaspoon hot sauce
- Garnish: chopped green onion
Instructions
- Soak beans in water to cover by 2 inches for 8 hours or overnight. Drain.
- In a large Dutch oven, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon, and let drain on paper towels, reserving drippings in pot. Add onion and garlic in hot drippings; cook, stirring frequently, until tender, about 5 minutes.
- Add beans to pot along with water to cover by 1/2 inch. Bring to a boil over medium-high heat. Reduce heat, partially cover, and simmer, stirring occasionally, until tender, about 2 hours, adding just enough water as needed to keep beans just covered. Stir in bacon, salt, pepper, and hot sauce. Garnish with green onion, if desired.
