Fruit and Chicken Garden Salad with Honey-Balsamic Vinaigrette

Makes 8 to 10 servings
Ingredients
- 1/2 cup balsamic vinegar
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1/8 teaspoon ground red pepper
- 2/3 cup extra-virgin olive oil
- 1 (10-ounce) bag fresh baby spinach
- 1 (6-ounce) bag fresh arugula
- 3 oranges, sectioned
- 1/2 pound asparagus, trimmed, blanched, and cut into 1-inch pieces
- 1 1/2 cups sliced fresh strawberries
- 1 cup fresh blueberries
- 4 cups shredded rotisserie chicken
Instructions
- In the container of a blender, process together vinegar and next 3 ingredients until combined. with blender running, add oil in a slow, steady stream until well combined. Cover and refrigerate up to 3 days.
- In a large bowl, toss together spinach and next 5 ingredients. Top with chicken, and serve with dressing.
