Twice-Baked Blue Cheese Potatoes

Ingredients
  1. 6 medium baking potatoes
  2. 1/2 cup buttermilk
  3. 1/2 cup sour cream
  4. 1 (4-ounce) package blue cheese, crumbled
  5. 1/4 cup minced chives
  6. 2 teaspoons seasoned salt
  7. Garnish: paprika
Instructions
  1. Preheat oven to 400º. Line a baking sheet with aluminum foil.
  2. Place potatoes on prepared pan, and bake for 1 hour or until tender.
  3. Cut off top of potatoes, and scoop out pulp into a large bowl, leaving a 1/2-inch shell. Add buttermilk, sour cream, and cheese to pulp, and mash to desired texture. Stir in chives and salt. Spoon pulp mixture into potato shells, and return to prepared pan.
  4. Bake for 30 minutes or until lightly browned. Garnish with paprika, if desired.
